Banana Bread

When bananas are more brown than yellow, make banana bread!


Ingredients


2  cups  whole wheat flour
3/4  teaspoon  baking soda
1/2  teaspoon  salt
1  cup brown sugar
1/4  cup  butter, softened
2  large eggs
1 1/2  cups  mashed ripe banana (about 3 bananas)
1/3  cup  plain low-fat yogurt
1  teaspoon  vanilla extract




Directions


1. Preheat oven to 350°. Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.



2. Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist.



3. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

Snow White's Apple Pie

Once upon a time a little girl fell in love with an Apple Pie, made by the only Disney princess with dark hair (it was quite a problem not being able to identify myself with other princess since they were blonde). Almost 15 years later, the dreams comes true: I made my first Apple Pie (I'm still a brunette, though)!


Ingredients:


Crust:

2 cups all-purpose flour

6-7 tablespoons ice water

1 teaspoon apple cider vinegar

2 tablespoons powdered sugar

1/2 teaspoon salt

7 tablespoons margarine

Filling:

about 6 thinly sliced peeled Red Delicious apples

1 tablespoon fresh lemon juice

2/3 cup  brown sugar

3 tablespoons all-purpose flour

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/8 teaspoon salt

Remaining ingredients:

margarine for the Pie plate

1 large egg white, lightly beaten

1 tablespoon sugar




Directions:


1. Preheat oven to 450°. To prepare crust, lightly spoon 2 cups flour into dry measuring cups; level with a knife. Combine 1/2 cup flour, ice water, and vinegar, stirring with a whisk until well blended to form a slurry. Combine remaining 1 1/2 cups flour, powdered sugar, and 1/2 teaspoon salt in a large bowl; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal. Add slurry; toss with a fork until flour mixture is moist.





2. Divide dough in half. Gently press each half into a 4-inch circle on 2 sheets of overlapping heavyduty plastic wrap; cover with 2 additional sheets of overlapping plastic wrap. Roll 1 dough half, still covered, into a 12-inch circle. Roll other dough half, still covered, into an 11-inch circle. Chill dough 10 minutes or until plastic wrap can be easily removed.

3. To prepare filling, combine the apples and lemon juice in a large bowl. Combine 2/3 cup sugar, 3 tablespoons flour, cinnamon, nutmeg, and 1/8 teaspoon salt in a small bowl. Sprinkle sugar mixture over apples; toss well to coat.





4. Remove top 2 sheets of plastic wrap from 12-inch dough circle; fit dough, plastic wrap side up, into a 9-inch deep-dish pie plate coated with margarine, allowing dough to extend over edge. Remove remaining plastic wrap. Spoon filling into dough; brush edges of dough lightly with water.



5. Remove top 2 sheets of plastic wrap from 11-inch dough circle; place, plastic wrap side up, overfilling. Remove remaining plastic wrap. Press edges of dough together. Fold edges under, and flute. Cut 4 (1-inch) slits into top of pastry using a sharp knife. Brush top and edges of pie with egg white; sprinkle with 1 tablespoon sugar.



6. Place pie on a baking sheet; bake at 450° for 15 minutes. Reduce oven temperature to 350° (do not remove pie from oven), and bake an additional 40 minutes or until golden. Cool on a wire rack.

I heart Asian grocery stores

Today I loaded with friends and gossip and I repeated my study-abroad adventures for the gazillion time! I'm so glad to see again all the people that I missed when I was in Belgium and I even managed to eat in my fav place in Pavia (my University city, by the way). I'm looking forward to return there to live at the end of this month.

Dinner was the same as yesterday, but I diligently documented the whole process this time. Sorry for the yellowish light, I should buy daylight bulbs.

Soba, Tofu and Veggies Stir-Fry






Ingredients (for one):


3 oz. (90gr) Soba noodles

Coarse Salt

1 tbsp extra-virgin olive oil

3 oz. extra-firm Tofu

drained and cut in cubes

1/4 red Bell Pepper, ribs and seeds

removed, thinly sliced lengthwise

1/2 Zucchini, chopped

3 big leaves of Bok Choy,

trimmed and thinly sliced crosswise

1 garlic clove, minced

1/8 tsp red pepper flakes

a little more than 1/2 tbsp peanut butter

1/2 tbsp apple vinegar

1/2 tbsp soy sauce


Directions:


1. Cook soba noodles in a large pot of salted water until al dente, following the package directions. Drain, and then rinse with coldwater; set aside.



2. Heat 1/2 tablespoon oil in a large nonstick skillet overmedium-high heat; add tofu and season with salt. Cook,tossing occasionally, until golden, 12 to 15 minutes.Transfer to a plate; set aside.



3. Heat remaining tablespoon oil in same skillet overmedium-high. Add bell peppers, zucchini, bok choy, garlic,and red pepper flakes; season with salt. Cover and cook, tossing occasionally until vegetablesare crisp-tender, 8 to 10 minutes.





4. Meanwhile, make sauce: In a small bowl, whisk together peanut butter and 2 tablespoons water, then whisk in vinegar and soy sauce. Add reserved noodles, tofu, and sauce to pan with veggies. Cook, tossing until noodles are heated through, 2 to 3 minutes.

Tomorrow I think I'll return in my normal (?) regime of photograph every meal. I successfully completed two weeks resolutions (still no flossing, though! Bad bad!!).

The Hal's plan provided rest for today, but I walked a lot (3 hours at least) since I needed to run some errands and I came home by foot from the station while chatting with a friend.

Now I'm off to some blog reading- on Friday night, I know, lame- but everyone has to study and I'm strangely tired in this period even though I sleep a lot.

Making Peanut Butter is fun!

(if you bought unshelled peanut!)

Yesterday evening, after a second unsuccessful trip to the grocery store for looking for
my drug
Peanut Butter, I decided to do it myself (I told you I was addicted!). I found a uber-easy  recipe with photos (I’m totally picture-dependent when it comes to food and recipes) here, so after dinner, while watching Hitch for the second time (it gave me the right strenght to persist in doing what you’ll see soon), I started.


Home-made Crunchy Peanut Butter


Ingredients for one jar:


2 abundant cups of dry roasted unshelled peanuts

1 tsp of vanilla extract

a pinch of salt (I used 1/2 tsp)

Normally, the whole proceeding takes 10-12 minutes, but only if you have roasted unshelled peanuts. Well, I didn’t find those! At the grocery store there were only dry roasted salted unshelled peanuts OR dry roasted shelled peanuts. As you can see, I chose the latter, thinking that for obtaining 2 cups I should have not unshell 500 gr of peanuts with bare hands (cooking can be as hard as a boot camp sometines!). I think the next time I’ll make half and half and I won’t add salt!!


Directions:


Put a little more than 1 cup and half of peanuts in the food processor for 7-8 minutes, mixing from times to times (when the food processor is off!). The peanuts should be creamy and oily. Add a pinch of salt (approx 1/2 tsp), 1/2 tsp of vanilla extract and the remaining peanuts to make the crunchy part. Process for other 5 minutes approx. to achieve the desidered consistency.

Travel back in time

I'm slowly returning back to normal, unpacking all my stuff (that I'll need to pack again in one month ah!) and so on. I'm also so happy for being able to use a real (and clean) kitchen!


Food Chapter


  • Breakfast
  • Lunch was home-made really garlicky hummus, leftover toasted Baguette aux céréales and carrots. I home-made the hummus since here there isn't in grocery stores (I know, cavemen). Actually, this evening I found one in a kind of bio-store; I'll give it a try, but I think I'll stick with my own, it takes like five minutes if you use pre-cooked chickpeas and you can adjust the flavor as you like (less garlic the next time!). I also ate an apple and drank an espresso with milk.




I'm pretending it's Summer, so what?


  • As undocumented snack I had a banana, a half of eat natural bar and a cup of green tea
  • Dinner was pumpkin tortelli (mmm) with a side salad of lamb's lettuce, cranberries, mixed seeds and balsamic vinaigrette. It actually was the fastest dinner ever. I also ate a pear and a plain goat yogurt.

Run Chapter


I did a 2 miles run plus some stretching as scheduled. Oh wait! I forgot to tell you that I'm doing this Hal's running plan that I found while reading this useful tips on one of the cutest and amazing blog that I've ever read! I started today with the plan so I think I'll repeat the first week x 2, even if I usually run more than 4 miles, but I want to do the things right! I'm also not sure if I'll sign up for an half marathon since by the end of the program I'll be in the middle of exams and thesis writing, so we'll see! Anyway it's a good way to challenge myself!

Resolutions Chapter


Besides the huge monthly resolution (that I haven't broken yet!), I decided to add some more weekly resolutions and try step-by-step to make them habits.

This week the chosen ones are:

1. Drink a cup of green tea per day

2. Daily yoga/stretching

3. Floss (it's gonna be hard!!)

February resolution

After a never ending day, I'm finally home.

But before here are some pictures of the yesterday's amazing and oversized dinner at Lukemieke

As main course I had the dish of the day that was a mixed dish of potatoes salad with cream, beets salad, Belgian endive, millet, polenta with tomato sauce and mozzarella cheese


My mom's main course was a tomatoes Belgian endive quiche plus potatoes and beets salad with cream. It absolutely was outstanding.


She actually received a whole quiche!

I ate nearly half of every part of my dish and a tiny slice of quiche, soooo good. It was too bad we couldn't bring home the leftovers since we were leaving the morning after.

The place is also very homey



I definitely recommend this place if you want a real vegetarian restaurant!

Today's eating was random and messy as trip day's eating can be. As usual breakfast is here.

Today my workout was carrying the heaviest baggages of my entire life to the station, since I didn't know the number of the local taxi service eh eh! I think my arms will be terribly sore tomorrow!

Now I'm off to my fav dinner ever: Pizza (the real one!)

Oh wait! Thanks to the whole-moving thing I'm really realized how many clothes I own, way too much; so my February resolution will be not to buy NOTHING for the whole month (not even shoes). It's gonna be hard, since I a trip to Paris will be involved... Will I be able to respect my self-imposed jail goal?

Gilmore Girls

Despite the ordination mess, yesterday was a nice evening, especially after a whole day of packing. My mom and I went to Mykene, a restaurant that i loved the first time I went there, but where I've never came back during these six month basically because it'a a little pricy for a income-equal-zero (or almost) college student like me. So, having a paying-parent around it's a good excuse to go in nice places to eat great food (or I thought this!). Anyway, first things first!

I really appreciated the time I spent with my mom since I don't live at home anymore and when I came back for the weekend we couldn't have proper time to chit chat or to really talk with each other, because there were always something to do or someone to meet. I think that this whole moving-madness has actually helped me to get closer again with my mom like we used to be.

Back to the restaurant that I loved so much the first time, well, we broke up. Definitely.

Why? I'll tell you soon...

The first course and the bread were amazing, like I remembered


a vegetable soup (really appreciated since here is sooo cold)


and 3 slices of whole wheat bread, mmm

The second course was planned to be jacket potatoes with grilled vegetables, sun-dried tomatoes and cheese plus a side salad, well, not exactly what I received...


Ok, I hate when the waitress mess with my ordination, but this time (I'm usually more bitchy on this point) I decided I could live with that (and eat it) since it looked like spinach and cheese jacket potatoes and sufficiently yummy.

Well, it turned out that there weren't only spinach and cheese on the jacket potatoes, but also a meat-hamburger in the mix! (Can you spot it?) I was really pissed off since I explicitly told the waitress I was vegetarian even if the dish was already marked as vegetarian. By the time they changed my dish (actually I'm not even sure if they redid the whole thing or just switched the hamburgers), I knew for sure I won't come back again!


What do you usually do when the waiter mess with your ordination?

Fit one room in four cardboard boxes

It's not easy, I tell you!

I hate moving! Totally. Every time I wonder how many things I'm able to accumulate in just a short period of time (6 months, this time in particular) and every time I make the promise that I won't do this mistake again. What mistake?To bring every single dress and pair of shoes that I own (or almost) even if I didn't wear it for ages.

Just in case, I tell myself; just in case what? That I feel the compelling need to wear my high school (or maybe even middle school) green corduroy skirt? Or that I want to wear one of the many pairs of flat shoes with an average of -6 C°?

I know it's all my fault and I'm so frustrated right now!

But I have a way to redeem myself: in less than one month I'll move again from my hometown to my university town (I know, crazy) so I'm here and now challenging myself to bring there all and only the strictly necessary. We'll see...

My mom arrived today for helping me with the all moving-thing. I'm so glad she is here so that someone can hear my complaints about how stupid I was to bring all this stuff over here. I love you mom!

This is becoming the most moanful (and boring) post ever, so here are my food intake of the day and I'm off to try to calm me down (I see ho chocolate and a book involved).

  • Afternoon snake: an undocumented apple, you know why.
  • Dinner at Greenway (the beauty of having a paying-parent to hang out with!)


There is a spinach burger under all that lettuce, I guarantee.

And it was also delicious.

I also had side salad with mixed veggies, wheat berries and raisins

and as dessert a spiced tea with a little piece of brownie

I talked a lot with my mom about what I wanna do after college (NO IDEA), if I have to choose a master (what kind?) and where to go to do it. I've really missed these long talks even if I'm not sure if this time it was effective to clear my mind.

Ok, time to go, an exciting packing day is waiting for me tomorrow!

Boring day, boring workout

Just two days of freedom and now I'm back to the good old all-day-long-studying days.

So that's what exactly I did today, minus the blogs-reading and some really needed time chit-chatting with one of my BFs.

I'll be brief because, guess what? More study-time is waiting for me!

Food intake of the day




Tomato soup

(the waiter messed with my order so I got a big cup instead of a small one, yes!)

Whole wheat bread

plus an undocumented Cappuccino with skim milk,

an half chocolate-covered marshmallow

and a pear


  • Snack


Soy vanilla yogurt with grapes, pomegranate seeds and sliced almonds

(and some giant clusters of granola straight from the box, mmm.

To be honest I actually always look for clusters

and I'm truly happy when I find one )


  • Dinner


Hummus and roasted Eggplant Sandwich

Tomatoes and Brussels sprouts

and a pear

(I was so close to eat a giant bowl of  cereal for dinner

that I should be proud of me for having cooked a semi-decent amount of food)

Today, the workout was a total FAIL: boring and lazy at the same time. I ran a little, then stopped, did some legs exercises, then ran again (really slooowwly), then I was too bored to continue so I went  home for some (boring) ab exercises. I know that it would be a disaster since:

1. I delayed it during the whole day

2. My ipod was dead just a second after I started to run

Apparently I'm back to my exam session exciting life. Good to know!

Tomorrow I'll go to Antwerpen IF the weather will be decent for some shopping, maybe not a such great idea since I'm moving in less than a week and I already have tons of stuff to fit in my baggages... mumble mumble

Random Monday II

Second post of the day. Lucky you!

I collected my database book (exciting!) from the post office and now he is menacingly staring at me... brrr

It doesn't even have words!!!

As snack I had an eat natural bar, documented (and eaten) very quickly since I didn't want to look like a crazy while snapping a photo of it. I don't think I succeed.


It was good, but they practically forgot the dark chocolate part

in the cranberries, macadamias and dark chocolate flavor's expectation

Ok, I know I've just promised that I would not have gone grocery shopping anymore, BUT that was before I passed by an asian food shop that I had never seen AND I remembered that I needed some tomato sauce if a wanted to cook the premeditate dinner for tonight. So I just did it, but I limited myself at just one item:


Whole wheat soba noodles

I have NO idea how to use them,


Any suggestion??


Dinner was a long-term (=yesterday) craved item:


Whole wheat Pasta with Eggplant, Chickpeas and Black olives sauce

It was delicious and it took me like 20 minutes to make it.

While waiting for the water to boil, I sliced a small onion and browned it with some oil in a frying pan; then I added 1/2 medium-size diced eggplant, chickpeas and some water to make them cook. When the eggplant was tender, I added the tomato sauce, pepper and hot pepper to taste, black olives and some basil (not fresh because I forgot to buy it, ehm ehm). Then I threw the cooked pasta directly in the pan to mix all the flavor. Enjoy, I surely did! =)

"Dessert" was a boring pear, but I'm sure I'll eat some chocolate later since I'm studying database... Moral support needed!

Today, I didn't run but I walked for like three hours (not all at once!) and I'll probably do some stretching later since my back is hurting me. Mmm I forget things, my back is a pain, I don't go out because I'm tired, it definitely looks like I'm 81.
